Roasted Beets

Beets are a sweet delicious earthy root vegetable. You may see Red (or purplish) Beets and Golden Beets at the farmers markets or grocery store. The Golden Beets tend to be less sweet than the Red beets, but just as delicious with the same nutritional values. One cup of beets are only 59 calories filled with fiber, potassium and protein. Beets are high in Vitamin C, Magnesium, Iron, B-6 and Calcium.

Cook Time 40 minutes
Total Time 50 minutes

Ingredients
  

  • 2 bunches Organic Beets Depending how much you wish to make..
  • 1 tbsp extra-virgin olive oil
  • 1-2 tbsp Balsamic vinegar

Instructions
 

  • Dice unpeeled, organic beets and bake in a pan lightly brushed with olive oil and the balsamic vinegar
  • Bake 375 for 40-50 minutes

Notes

Cooks Notes
Beets can be used as a side dish, add to salads, soups or add to a quinoa/rice dish.
Don't throw out the Beet Greens, they have great source of fiber, packed with antioxidants!
Saute with garlic & olive oil, add to soups, salads or even on your pizza!
